Where to Eat on the East End: Banzai Burger
Hip Amagansett sushi and patty shack Banzai Burger (2095 Montauk Highway, 631-267-3715) serves roll rockstar Isao Yoshimura’s own fresh catches (order the fluke!) and counts chicettes like Kim Cattrall, Grace Coddington, Annabel Tollman, Kirsten Dunst, and Dylan Lauren as fans. When was your first Hamptons visit?
In 1997; I heard Montauk had good fishing, my other great passion!
You do sushi lessons, right?
I give private lessons for $150 per hour; you eat what you make. I recently gave Kelly Killoren Bensimon one. She’s very nice!
What’s a rookie sushi-making move?
Rolling too tightly, and not using a sushi knife properly. Also, one of the hardest things to perfect is the rice; you study that in Japan for years.
Where’s the best raw fish in the Hamptons?
Direct from Montauk’s commercial fishermen or from Gosman’s Fish Market. That is, if you can’t catch it yourself!
What should we get?
A sushi knife—which can cost upwards of $500—bamboo mats, a rice cooker, sealable containers, high-grade sushi rice, Nori, rice vinegar, sugar, salt, and wasabi. And refrigeration must be at 34 degrees!
Do you have a signature roll?
Local fluke or porgy with Amagansett asparagus and sea salt: it’s crisp, clean, and fresh! I go fishing after work with Captain Oliver Saul and use our catches at Banzai. I also love Napeague Bay baby squid.
